Maria’s Honduran Enchiladas Recipe

Serves: 2 people
Ingredients:
1 package of corn flour (24 oz)
1 cup hot water
½ pound of ground beef
1 egg
3 tablespoons of ketchup
1 tablespoon cumin
2 teaspoons achiote (spice native to Central America)
Oil
Pepper and salt to taste
Optional: onions, peppers, cheese, whatever else you like in your enchiladas
Directions:
1. Mix the water, pinch of salt, and the corn flour until dough like consistency
2. Add enough oil to cover the pan and let it warm up
3. Form small round dough balls and roll out to round flat tortillas
4. Fry the tortillas on each side until cooked
5. Mix the egg and ground beef together and saute on pan with ketchup, cumin, achiote, pepper salt, and whatever else you’d like
6. When the meat is browned, spoon mixture into tortillas and enjoy!
